Soft, rich, and beautifully buttery, brioche is a classic French bread with a tender crumb and lightly sweet flavor. Made with eggs, milk, and butter, this luxurious dough bakes into a golden loaf perfect for breakfast, sandwiches, or indulgent homemade French toast.
Add the flour, yeast, salt and sugar to the mixing bowl and stir quickly to combine.
Next, add in the eggs, milk and butter. Stir on low until the ingredients come together and then increase the speed to medium. Continue to mix for 12-15 minutes, until the dough is shiny and supple and forms a ball around the dough hook.
Cover the dough and allow it to rise until doubled, about an hour.
Grease two loaf pans. Divide dough into two equal portions. Shape each portion into a loaf or divide into 6-8 balls and place side by side in each pan for a classic brioche look.
Cover pans loosely and let rise again for 1–2 hours, until puffy and nearly doubled.
Preheat oven to 350°F. Brush tops with an egg wash made from egg yolks, whisked with a fork.
Bake for 30–40 minutes, until deep golden brown and the internal temperature reaches 190°F.
Cool in pans for 10 minutes, then transfer to a wire rack to cool completely before slicing.
